In 1941, the Palestinian Rakab family opened a modest ice cream factory in the center of Ramallah, which later became a world-famous one. The ice cream is made in the shop in the traditional way, despite the development of the mechanical capabilities that make it, as the factory started producing five foods of ice cream, which are “milk, lemon, strawberry, pineapple, and chocolate.” Today, it produces about 30 flavors of ice cream, including the five main flavors that it began making in the 1940s. Rakab ice cream has a rubbery texture and is served to customers throughout the year, in addition to the use of Arabic mastic, which adds a special and unique taste to the served ice cream.
